Mini Roasted Red Pepper Egg Bites

6 large eggs

1/2 cup milk (you can use whole or almond milk)

1/2 cup roasted red peppers, finely chopped (use jarred or homemade)

1/2 cup shredded cheese (choose either cheddar or mozzarella)

1/4 cup fresh spinach, chopped

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

Non-stick cooking spray or a drizzle of olive oil for greasing

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). While the oven is heating, prepare a muffin tin by greasing each cup thoroughly with non-stick cooking spray or a light coating of olive oil.

    Prepare the Egg Mixture: In a large mixing bowl, crack the eggs and pour in the milk. Whisk the mixture vigorously until it's completely blended. Add the garlic powder, onion powder, salt, and pepper, mixing well to ensure all the spices are evenly incorporated.

      Incorporate Vegetables and Cheese: Carefully fold the chopped roasted red peppers, fresh spinach, and shredded cheese into the egg mixture. Use a spatula or wooden spoon to gently combine the ingredients until they are distributed uniformly throughout.

        Fill the Muffin Tin: Pour the egg mixture into the prepared muffin tin, filling each cup about three-quarters full. This will leave enough space for the egg bites to rise while baking without overflowing.

          Bake: Place the muffin tin in the preheated oven. Bake for approximately 20-25 minutes, or until the egg bites are firmly set and lightly golden on top. To check for doneness, insert a toothpick into the center of an egg bite—the toothpick should come out clean.

            Cool and Serve: Once baked, remove the muffin tin from the oven and let the egg bites cool in the tin for about 5 minutes. After cooling, use a small knife to carefully run around the edges of each bite and gently pop them out of the tin. Serve them warm for a delicious treat, or allow them to cool completely before storing in an airtight container in the refrigerator for up to 4 days.
