2 medium zucchinis

1 cup cooked quinoa

1/2 cup cherry tomatoes, diced

1/2 cup black beans, drained and rinsed

1/4 cup corn (fresh, canned, or frozen)

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

Olive oil, for drizzling

Lime wedges, for serving

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper to ensure easy cleanup after baking.

    Prepare the Zucchini: Rinse the zucchinis under cool water and trim off both ends. Slice each zucchini into 1-inch thick rings. With a small spoon or a melon baller, gently scoop out the seeds and a little of the inner flesh from each ring, creating a small hollow cavity while taking care not to pierce through the bottom. Set the prepared zucchini rings aside.

      Make the Quinoa Filling: In a large mixing bowl, combine the cooked quinoa with the diced cherry tomatoes, black beans, corn, and feta cheese if you’re using it. Add in the chopped cilantro, ground cumin, smoked paprika, salt, and pepper. Mix everything together thoroughly until all the ingredients are evenly incorporated.

        Stuff the Zucchini Rings: Using a spoon, carefully fill each zucchini ring with the quinoa mixture. Pack the filling softly enough that it doesn’t spill over but firmly enough to keep it in place as you work.

          Arrange and Drizzle: Position the stuffed zucchini rings on the lined baking sheet. Lightly drizzle olive oil over the tops of each ring to promote golden browning during roasting.
