    Prepare the Eggplants: Wash the eggplants thoroughly and slice them into 1/2-inch thick rounds. Sprinkle sea salt on both sides of the slices and place them on a wire rack. Allow them to rest for 15-20 minutes; this will help draw out excess moisture and bitterness. After the resting period, rinse the slices under cold water to remove the salt, and gently pat them dry with paper towels.

      Brush with Olive Oil: Line a baking sheet with parchment paper for easy cleanup. Arrange the eggplant slices in a single layer on the baking sheet. Using a brush, lightly coat both sides of each slice with olive oil to enhance their flavor and texture during baking.

        Bake the Eggplants: Place the baking sheet in the preheated oven and roast the eggplant slices for approximately 20 minutes. Be sure to flip them halfway through the baking time so they cook evenly and become tender with a beautiful golden-brown color.

          Assemble the Pizza Bites: Remove the roasted eggplant rounds from the oven. Spoon about a tablespoon of marinara sauce onto each slice, spreading it evenly.
