6 large egg whites

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled (optional)

1/4 cup red onion, finely chopped

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon salt

Preheat the Oven: Start by preheating your oven to 350°F (175°C). While it warms up, grease a muffin tin with cooking spray or lightly drizzle it with olive oil to ensure the bites don’t stick.

    Sauté the Spinach: Heat a skillet over medium heat. Add the chopped spinach and sauté for about 2-3 minutes, or until the spinach is wilted and tender. Once done, remove it from heat and let it cool for a few moments.

      Combine the Mixture: In a large mixing bowl, whisk together the egg whites, black pepper, garlic powder, and salt until well blended. Carefully fold in the cooled sautéed spinach, halved cherry tomatoes, finely chopped red onion, and feta cheese (if you’re using it). Ensure that everything is evenly incorporated.

        Fill the Muffin Tin: Using a ladle or measuring cup, pour the egg mixture into the prepared muffin tin, filling each cavity approximately three-quarters full to allow room for the bites to rise during baking.

          Bake: Transfer the muffin tin to the preheated oven and bake for 15-20 minutes. They are done when the egg whites are set and the tops have a light golden hue. You can check for doneness by inserting a toothpick in the center; it should come out clean.

            Cool and Remove: After baking, take the muffin tin out of the oven and allow it to cool for about 5 minutes. To release the bites, gently run a knife around the edges of each muffin before carefully lifting them out of the tin.
