Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/2 cup unsalted butter, cold and cut into small cubes

3/4 cup whole milk

4 large eggs

1 cup crumbled feta cheese

1/2 cup fresh spinach, finely chopped (optional)

1 teaspoon dried oregano

1 tablespoon olive oil

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper for easy cleanup.

    Make the Biscuit Dough:

      - In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Whisk these dry ingredients together until well blended.

        - Incorporate the cold, cubed butter into the flour mixture using a pastry cutter or your fingertips. Work until it resembles coarse crumbs with pea-sized clumps of butter throughout.

          - Slowly pour in the whole milk and mix just until the ingredients come together. Avoid overmixing; it's okay if there are a few lumps for a flaky texture.

            Prepare the Egg Filling:

              - In a medium-sized bowl, crack in the eggs and whisk them together. Then add the crumbled feta cheese, chopped spinach (if desired), and dried oregano. Mix until all ingredients are combined, and set aside the filling.

                Shape the Bombs:

                  - Lightly flour your work surface and roll out the biscuit dough to about 1/2-inch thickness. Use a round cutter or a glass to cut out circles approximately 4 inches in diameter.

                    - Spoon about 2 tablespoons of the egg and feta mixture into the center of each dough circle.

                      - Carefully fold the dough over the filling to form a sealed ball. Pinch the edges together firmly to ensure the filling is completely enclosed. Place each filled ball seam-side down on the prepared baking sheet.

                        Bake to Perfection:

                          - To achieve a lovely golden finish, lightly brush the tops of the biscuit bombs with olive oil.

                            - Place the baking sheet in the preheated oven and bake for 15-18 minutes, or until the tops are nicely golden brown and the biscuits are fully cooked through.

                              Serve and Enjoy:

                                - Once baked, remove the biscuit bombs from the oven and let them cool for a few minutes on the baking sheet.

                                  - For an extra touch, sprinkle with chopped fresh parsley before serving. Enjoy these warm as a delightful breakfast treat or a savory snack!
