8 small flour tortillas (mini size)

1 cup diced cucumber

1 cup diced tomatoes

1/2 cup red onion, finely chopped

1/2 cup fresh cilantro, chopped

1/2 cup feta cheese, crumbled (optional)

1 cup shredded lettuce

For the Tikka Sauce:

1/2 cup plain yogurt

1 tablespoon mayonnaise

1 tablespoon tikka masala spice blend

1 teaspoon freshly squeezed lemon juice

Marinate the Chicken: In a mixing bowl, combine the yogurt, tikka masala spice blend, lemon juice, minced garlic, minced ginger, and a pinch of salt and pepper. Add the cubed chicken thighs to the bowl and toss well to ensure all pieces are evenly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or for optimal flavor, overnight.

    Cook the Chicken: Preheat a grill or a skillet over medium-high heat. Once heated, remove the chicken from the marinade, shaking off any excess. Cook the chicken for about 15-20 minutes, turning occasionally to achieve an even char and ensure it's fully cooked through. The chicken should have a nice brown color. Once cooked, remove from heat and set aside.

      Prepare the Tikka Sauce: In a small mixing bowl, combine the plain yogurt, mayonnaise, tikka masala spice blend, lemon juice, and a sprinkle of salt. Mix thoroughly until the sauce is creamy and well combined. Taste and adjust seasoning if necessary.
