1 medium tomato, diced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 cup sour cream (for serving)

Salsa or pico de gallo (for serving)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to prepare for baking.

    Prepare the Tortilla Cups:

      - Use a round cutter or the rim of a glass to cut each tortilla into circular shapes, approximately 3-4 inches in diameter.

        - Gently press each tortilla circle into the wells of a muffin tin, shaping them into small cups.

          Bake the Tortilla Cups:

            - Place the muffin tin in the preheated oven. Bake for about 5-7 minutes, or until the tortillas become lightly crispy but avoid burning them. Once done, remove the tin and allow it to cool slightly.

              Mix the Filling:

                - In a large mixing bowl, combine the shredded chicken, black beans, corn, chopped red onion, diced tomato, diced jalapeño (if using), chopped cilantro, ground cumin, chili powder, along with salt and pepper. Mix the ingredients thoroughly until they are evenly distributed.

                  Fill the Cups:

                      Add Cheese:
