Ingredients

12 mini taco shells (available in stores or easy to make at home)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

½ cup cream cheese, softened to room temperature

1 jalapeño, finely chopped (remove seeds for a milder kick)

¼ cup fresh green onions, finely chopped

½ teaspoon garlic powder

½ teaspoon onion powder

1 teaspoon taco seasoning

Fresh cilantro leaves, for garnish

Salsa, for serving

Instructions

Preheat the Oven: Set your oven temperature to 375°F (190°C) to ensure it's ready for baking.

Prepare the Cheese Mixture: In a large mixing bowl, blend together the cheddar cheese, mozzarella cheese, and softened cream cheese. Add the finely chopped jalapeño, green onions, garlic powder, onion powder, and taco seasoning. Mix thoroughly until all ingredients are evenly incorporated, ensuring a consistent flavor throughout.

Fill the Taco Shells: Using a spoon, fill each mini taco shell with a generous portion of the cheese mixture. Be cautious not to overfill, as this can cause spillage during baking.

Arrange on Baking Sheet: Place the filled taco shells standing upright in a baking dish or on a lined baking sheet. Ensure they are tightly positioned next to each other to help keep their shape during baking.

Bake: Transfer the taco-filled baking sheet to the preheated oven. Bake for approximately 10-15 minutes, or until the cheese is wonderfully melted and bubbling, and the taco shells are lightly crisped.

Garnish and Serve: Once removed from the oven, allow the cheese bites to cool for about a minute. Garnish each with fresh cilantro leaves. Serve with a side of salsa for dipping, enhancing the flavor profile.
