Ingredients

1 medium head of cauliflower, roughly chopped

1/2 cup almond flour

1/4 cup grated Parmesan cheese (substitute with nutritional yeast for a vegan option)

2 large eggs (or 2 flax eggs for a vegan option)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup BBQ sauce (your choice of store-bought or homemade)

1 cup shredded coleslaw mix (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

Prepare the Cauliflower: In a steamer pot, steam the chopped cauliflower for about 8-10 minutes, or until it’s tender enough to easily pierce with a fork. Once cooked, drain any excess water and allow the cauliflower to cool slightly.

Rice the Cauliflower: After cooling, transfer the cauliflower to a food processor. Pulse it until it resembles rice or fine crumbs, taking care not to over-process; you want to maintain some texture.

Make the Dough: In a large mixing bowl, combine the riced cauliflower with almond flour, Parmesan cheese (or nutritional yeast), eggs (or flax eggs), garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir the mixture until it becomes cohesive and dough-like.

Form the Slider Buns: With your hands, take portions of the mixture and shape them into small rounds resembling slider buns (approximately 2-3 inches in diameter). Place each formed bun onto the prepared baking sheet, ensuring to leave space between them for even cooking.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the slider buns are golden brown and firm to the touch, indicating they are cooked through.

Prepare the BBQ Cauliflower Filling: In a medium bowl, combine the remaining riced cauliflower with the BBQ sauce. Feel free to adjust the flavors by adding additional seasonings, if desired. Set this mixture aside.

Assembly: Once the buns have cooled slightly, cut each slider bun in half. Generously fill each half with the BBQ cauliflower mixture. If you wish, top with a handful of shredded coleslaw for added crunch and flavor. Finish with a sprinkle of fresh chopped parsley for garnish.

Serve: Enjoy these mini BBQ cauliflower slider buns warm as a delightful appetizer or a crowd-pleasing party snack!

Prep Time: 20 minutes | Total Time: 50 minutes | Servings: Makes approximately 10 sliders
