8 oz (225 g) cream cheese, softened to room temperature

1/2 cup (100 g) granulated sugar

1 tsp pure vanilla extract

1 large egg

1/2 cup (120 ml) sour cream

1/4 cup (60 ml) heavy cream

For the Crust:

1 cup (100 g) graham cracker crumbs

1/4 cup (50 g) granulated sugar

1/2 cup (115 g) unsalted butter, melted and slightly cooled

For the Toppings:

1-2 ripe bananas, peeled and sliced

1 cup (240 ml) whipped cream

Chocolate sauce, for drizzling

Strawberry sauce, for drizzling

Chopped nuts (e.g., walnuts or pecans), optional

Maraschino cherries, for garnish

Preheat the Oven: Begin by preheating your oven to 325°F (160°C). Line a standard muffin tin with paper liners to prevent sticking.

    Make the Crust: In a medium mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the mixture resembles wet sand. Press about 1 tablespoon of the crumb mixture firmly into the bottom of each muffin liner, creating an even crust.

      Prepare the Cheesecake Batter: In a large bowl, beat the softened cream cheese using a hand mixer or stand mixer until it is smooth and creamy. Gradually add the granulated sugar, continuing to mix until well combined. Carefully mix in the vanilla extract, followed by the egg, sour cream, and heavy cream, beating until the batter is smooth and free of lumps.

        Fill the Muffin Tin: Using a spoon or a piping bag, carefully fill each muffin liner with the cheesecake batter, stopping when each is about 2/3 full. Tap the muffin tin gently on the counter to remove any trapped air bubbles.

            Cool Completely: After 10 minutes, remove the cheesecakes from the oven and allow them to cool at room temperature for 15 minutes. Once cooled, transfer them to the refrigerator and chill for at least 2 hours, or until they are fully set.
