4 large whole wheat tortillas

1 cup crumbled feta cheese

1 cup shredded mozzarella cheese

1 cup cooked spinach, chopped (can use fresh or frozen)

1 cup ripe cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and sliced

1/4 cup roasted red peppers, diced

1 teaspoon dried oregano

1 teaspoon garlic powder

1 tablespoon olive oil (for cooking)

Fresh basil leaves, for garnish

Salt and pepper, to taste

Prepare the Filling: In a mixing bowl, combine the chopped cooked spinach, halved cherry tomatoes, sliced Kalamata olives, diced roasted red peppers, crumbled feta cheese, shredded mozzarella cheese, dried oregano, garlic powder, and a pinch of salt and pepper. Stir well until all the ingredients are evenly mixed.

    Assemble the Quesadillas: Lay one tortilla on a flat surface. Spoon an even portion of the cheese and vegetable filling onto one half of the tortilla, leaving a small border around the edge. Fold the other half of the tortilla over the filling to create a half-moon shape. Repeat this process for the remaining tortillas.

      Cook the Quesadillas: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, carefully place one or two assembled quesadillas into the pan, ensuring not to overcrowd. Cook for approximately 3-4 minutes, or until the bottom is golden and crispy, and the cheese starts melting.

        Flip and Finish Cooking: Using a spatula, gently flip the quesadilla and continue cooking for another 3-4 minutes until the second side is also golden and crisp. Once cooked, transfer the quesadilla to a cutting board and let it rest for about one minute before slicing it into triangles.

          Serve: Garnish the quesadillas with fresh basil leaves for an aromatic touch. Pair them with a side of tzatziki sauce, hummus, or your favorite dipping sauce to enhance the Mediterranean flavors.
