Ingredients

1 lb ground chicken

1 cup cooked quinoa

1/2 cup crumbled feta cheese

1/4 cup fresh parsley, finely chopped

2 cloves garlic, minced

1/2 teaspoon dried oregano

1/2 teaspoon paprika

1/4 teaspoon black pepper

1/4 teaspoon salt

1 egg, lightly beaten

1/4 cup breadcrumbs

2 tablespoons olive oil (for cooking)

Lemon wedges (for serving)

Tzatziki sauce (optional, for serving)

Instructions

Preheat Your Oven: If you opt to bake the patties, preheat your oven to 400°F (200°C). Alternatively, you can cook the patties entirely on the stovetop for a different texture.

Mix the Ingredients: In a sizable mixing bowl, combine the ground chicken, cooked quinoa, crumbled feta cheese, finely chopped parsley, minced garlic, dried oregano, paprika, black pepper, salt, the beaten egg, and breadcrumbs. Gently mix with a spatula until all ingredients are blended, being cautious not to overmix, which could make the patties tough.

Form the Patties: Wet your hands slightly to prevent sticking, then take portions of the mixture and shape them into patties about 2-3 inches in diameter. You should yield around 8 patties from this mixture.

        Cook the Patties:

          - Stovetop Method: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, carefully add the patties in batches (to avoid crowding), cooking them for about 4-5 minutes on each side until they develop a golden brown crust and are cooked through.

            - Oven Method: Arrange the formed patties on a parchment-lined baking sheet. Bake them for approximately 20 minutes, turning them halfway through to ensure even cooking and browning.

Serving: Once cooked, serve the Mediterranean chicken patties hot, accompanied by fresh lemon wedges for an added zest. If you like, serve with a side of tzatziki sauce for a refreshing complement.

Garnish for Appeal: For an elegant touch, you can garnish the patties with extra chopped parsley or a light sprinkle of feta cheese just before serving.
