2 medium sweet potatoes, peeled and diced into 1-inch cubes

2 medium parsnips, peeled and diced into 1-inch cubes

2 medium carrots, peeled and diced into 1-inch pieces

1 small red onion, diced

3 tablespoons olive oil

3 tablespoons pure maple syrup

1 teaspoon ground cinnamon

1 teaspoon garlic powder

Salt and pepper, to taste

1 cup Brussels sprouts, trimmed and halved

Fresh thyme or parsley, for garnish (optional)

Begin by preheating your oven to 400°F (200°C), ensuring it reaches the correct temperature before roasting.

    In a large mixing bowl, combine the diced sweet potatoes, parsnips, carrots, and the diced red onion.

      Drizzle the olive oil and pure maple syrup over the vegetables. Sprinkle in the ground cinnamon, garlic powder, salt, and freshly cracked pepper. Toss everything together until each piece is well-coated in the mixture.

        Spread the seasoned vegetable mixture evenly onto a baking sheet lined with parchment paper, creating a single layer for optimal roasting.

          Place the baking sheet in the preheated oven and roast the vegetables for approximately 20 minutes.

            After the initial roasting time, carefully remove the baking sheet from the oven. Add the halved Brussels sprouts to the vegetable mix, tossing them gently to combine with the roasted vegetables.
