Ingredients

2 ripe mangoes, peeled and diced into small cubes

1 large avocado, diced

1 small red onion, finely chopped

1 jalapeño pepper, seeds removed and finely diced (adjust quantity based on desired spice level)

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Juice of 2 limes

Salt and freshly ground black pepper, to taste

Instructions

Prepare the Mangoes: Begin by peeling the mangoes. Carefully slice down each side of the pit and cut the fruit into small cubes, avoiding any stringy fibers. Place the diced mango in a large mixing bowl.

Slice the Avocado: Cut the avocado in half, carefully remove the pit, and scoop out the flesh into the bowl. Dice the avocado into smaller pieces and set it aside. To prevent oxidation and browning, you can sprinkle a little lime juice on the diced avocado.

Combine Ingredients: In the same large bowl, add the finely chopped red onion, diced jalapeño, and halved cherry tomatoes to the mango and avocado.

Add Fresh Herbs: Gently fold in the chopped cilantro, incorporating it evenly into the mixture for a burst of fresh flavor.

Dress the Salsa: Squeeze the juice of two limes over the salsa blend, ensuring that all ingredients are well coated. The lime juice not only enhances the flavor but also helps keep the avocado vibrant.

Season to Taste: Sprinkle salt and freshly ground black pepper over the salsa according to your preference. Using a spatula or large spoon, gently toss everything together, being careful not to mash the avocado pieces.

Let It Rest: Allow the salsa to sit uncovered at room temperature for about 10-15 minutes. This resting period will let the flavors meld beautifully.
