1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon vanilla extract

16 oz cream cheese, softened to room temperature

¾ cup granulated sugar

2 large eggs, room temperature

1 teaspoon vanilla extract

½ cup sour cream

1 ½ cups fresh blueberries (frozen may be used if fresh are unavailable)

For the blueberry topping:

2 cups fresh blueberries

¼ cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

1 tablespoon water

Preheat the Oven: Preheat your oven to 325°F (162°C). Grease a 9x9-inch baking pan with non-stick spray and line the bottom with parchment paper, allowing some overhang on the sides for easy removal later.

    Make the Crust: In a medium-sized mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and vanilla extract. Stir until the crumbs are well-coated. Press the mixture firmly and evenly into the bottom of the prepared baking pan. Bake for 10 minutes, then remove from the oven and allow to cool completely.

      Prepare the Cheesecake Filling: In a large mixing bowl, use an electric mixer to beat the softened cream cheese until it is smooth and creamy. Gradually add the granulated sugar, mixing until fully incorporated. Add the eggs one at a time, mixing well after each addition. Finally, stir in the vanilla extract and sour cream until the mixture is completely smooth and creamy.

        Add Blueberries: Gently fold in the fresh blueberries into the cheesecake mixture using a spatula. Take care not to crush the berries to maintain their integrity.
