1 packet taco seasoning (or homemade)

1 can (15 oz) black beans, drained and rinsed

1 can (11 oz) sweet corn, drained

1 cup homemade or store-bought salsa

4 cups tortilla chips

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 medium jalapeño, sliced (optional for a spicy kick)

1 medium tomato, diced

1/2 cup sliced black olives (optional)

1/4 cup chopped green onions

1/2 cup sour cream (for serving)

Fresh cilantro for garnish (optional)

    Cook the Ground Beef: In a large skillet set over medium heat, add the ground beef. Use a spatula to break it up as it cooks, browning the meat for about 6-8 minutes. Once browned, drain off any excess fat for a healthier dish.

      Season the Meat: Sprinkle in the taco seasoning along with a splash of water (adjust according to package instructions). Stir well and cook for an additional 2-3 minutes, allowing the flavors to meld and the meat to be thoroughly coated. Remove the skillet from heat.

        Prepare the Base: Take a large 9x13 inch casserole dish and layer half of the tortilla chips evenly on the bottom, creating a sturdy base for the avalanche of flavors.

          Layer Ingredients: Spread half of the seasoned ground beef over the base of tortilla chips, followed by half of the black beans, sweet corn, and salsa. Sprinkle with half of the shredded cheddar and Monterey Jack cheeses, allowing for maximum cheesiness.
