2 lbs russet potatoes, peeled and cut into 1-inch cubes

1/2 cup sour cream, at room temperature

1/2 cup cream cheese, softened for easy mixing

1 cup shredded sharp cheddar cheese, plus extra for topping

1/2 cup milk (adjust as needed for desired consistency)

1/4 cup unsalted butter, at room temperature

1 cup cooked bacon, crumbled into small pieces

1/2 cup green onions, thinly sliced, plus extra for garnish

Cook the Potatoes: Place the peeled and cubed russet potatoes in a large pot. Fill the pot with cold water, ensuring the potatoes are submerged. Add a pinch of salt to the water. Bring the water to a boil over high heat, then reduce the heat to medium, allowing the potatoes to simmer until they are fork-tender, about 15-20 minutes. Once cooked, drain the potatoes thoroughly.

    Mash the Potatoes: Return the drained potatoes to the pot. Add in the room temperature unsalted butter, softened cream cheese, and sour cream. Using a potato masher or an electric mixer, mash the mixture until it achieves a smooth and creamy texture.

      Incorporate Other Ingredients: Gradually mix in the milk, starting with 1/2 cup to control the consistency. Add the shredded sharp cheddar cheese, seasoning the mixture with salt and pepper to taste.
