Lemon Herb Cauliflower Steaks

1 large head of cauliflower

4 tablespoons extra virgin olive oil

Juice and zest of 1 large lemon

2 cloves garlic, finely minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon smoked paprika

½ teaspoon sea salt (adjust to taste)

¼ teaspoon black pepper

Fresh parsley, finely chopped (for garnish)

Prepare the Cauliflower: Remove the leaves and thick stem from the cauliflower head. Turn it upside down on a cutting board. Carefully slice the cauliflower into ¾-inch thick “steaks.” You should yield about 2-3 substantial steaks from the center. Set aside the remaining florets for another dish or for snacking.

    Make the Marinade: In a mixing bowl, combine the extra virgin olive oil, fresh lemon juice, lemon zest, minced garlic, dried thyme, dried oregano, smoked paprika, sea salt, and black pepper. Whisk the mixture together until it is fully blended and the garlic is evenly distributed.

      Marinate the Steaks: Arrange the cauliflower steaks in a large baking dish or on a flat tray. Using a brush, generously coat both sides of each steak with the marinade you just prepared. Allow them to marinate at room temperature for at least 20 minutes; this will enhance the flavors.

        Preheat the Oven: While the cauliflower is marinating, preheat your oven to 425°F (220°C) to ensure it is hot and ready for baking.
