Ingredients

1 whole turkey (12-14 lbs)

1 cup unsalted butter, softened to room temperature

1/2 cup honey

1/2 cup fresh lemon juice (approximately 3-4 large lemons)

Zest of 2 lemons

4 cloves garlic, minced finely

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme leaves, chopped

1 tablespoon salt

1 teaspoon freshly ground black pepper

2 cups chicken broth

Fresh lemon slices and sprigs of rosemary for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 325°F (163°C).

Prepare the Turkey: Remove the turkey from the refrigerator and thoroughly pat it dry using paper towels. Allow the turkey to sit at room temperature for about 30 minutes to ensure even cooking.

Make the Glaze: In a medium mixing bowl, combine the softened butter, honey, fresh lemon juice, lemon zest, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Whisk until the mixture is smooth and well incorporated.

Season the Turkey: Carefully loosen the skin over the breast and thighs of the turkey by running your fingers between the skin and the meat, being cautious not to rip the skin. Generously rub a portion of the lemon glaze under the skin, directly onto the meat for maximum flavor infusion.

Coat the Turkey: Use the remaining lemon glaze to lavishly coat the exterior of the turkey. Ensure even coverage, paying special attention to any nooks and crannies to enhance flavor.

Prepare for Roasting: Position the turkey breast side up on a roasting rack situated inside a large roasting pan. Pour the chicken broth into the bottom of the pan, creating moisture that will keep the turkey juicy as it cooks.

Roast the Turkey: Place the turkey in the preheated oven. Baste the turkey every 30 minutes with the pan juices to promote a golden, flavorful skin. If the skin begins to darken too rapidly, loosely tent it with aluminum foil.

Check the Temperature: Roast the turkey for approximately 3 to 3.5 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C), confirming it is thoroughly cooked.

Rest the Turkey: Once the turkey is done, carefully remove it from the oven. Loosely cover the turkey with aluminum foil, allowing it to rest for 20-30 minutes. This resting period is crucial for redistributing the juices, ensuring each slice is moist.

Serve: Carve the rested turkey and serve it with the delicious pan drippings. For an eye-catching presentation, garnish each serving platter with fresh lemon slices and sprigs of rosemary.
