8 oz (225g) penne pasta

2 cups fresh green beans, trimmed and cut into 2-inch pieces

1/3 cup unsalted butter, divided

2 cloves garlic, minced

Zest of 1 medium lemon

Juice of 1 medium lemon

1 cup heavy cream

1/2 cup grated Parmesan cheese, plus 1/4 cup for topping

1/2 teaspoon red pepper flakes (optional)

Salt and freshly ground black pepper, to taste

1/4 cup breadcrumbs

Fresh parsley, chopped, for garnish

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C), allowing it to reach temperature while you prepare the other ingredients.

    Cook the Pasta and Green Beans: In a large pot, bring a generous amount of salted water to a rolling boil. Add the penne pasta and cook according to package instructions until it's just al dente. In the final 3 minutes of cooking, carefully add the trimmed green beans to the pot. Once done, drain both the pasta and green beans, and set them aside.

      Prepare the Lemon Butter Sauce: In a large skillet set over medium heat, melt 1/4 cup of unsalted butter. Once melted, add the minced garlic and sauté for about 1 minute, or until the garlic becomes fragrant but not browned.

        Incorporate Lemon and Cream: To the skillet, stir in the lemon zest and juice, allowing the mixture to combine. Then, pour in the heavy cream and let it simmer gently for about 2-3 minutes until it thickens slightly. Gradually mix in 1/2 cup of grated Parmesan cheese, stirring until the cheese is fully melted and the sauce is smooth. Season with red pepper flakes (if desired), salt, and pepper to taste.

          Combine Pasta with Sauce: In a large mixing bowl, combine the drained penne pasta and green beans with the lemon butter sauce. Gently toss everything together until the pasta and beans are well coated in the rich sauce.

            Transfer to Baking Dish: Grease a 9x13-inch baking dish with a little butter or cooking spray. Pour the pasta and green bean mixture into the dish, spreading it evenly.
