Ingredients

1 ½ cups chocolate sandwich cookie crumbs (e.g., Oreo)

½ cup unsalted butter, melted

4 (8 oz) packages cream cheese, softened at room temperature

¾ cup granulated sugar

1 teaspoon vanilla extract

4 large eggs, at room temperature

1 cup sour cream

1 cup heavy whipping cream, chilled

1 cup Kit Kat bars, chopped (approximately 6 full-size bars)

¼ cup cocoa powder (for decoration)

Additional Kit Kat bars for garnish

Instructions

Prepare the crust: Begin by preheating your oven to 325°F (160°C). In a medium mixing bowl, combine the chocolate sandwich cookie crumbs with the melted butter. Stir until the crumbs are evenly coated with butter. Press this mixture firmly and evenly into the bottom of a 9-inch springform pan to establish a solid crust. Bake in the preheated oven for 10 minutes, then remove the crust and allow it to cool completely.

Make the filling: In a large mixing bowl, use an electric mixer to beat the softened cream cheese and granulated sugar until the mixture is smooth and creamy, approximately 2-3 minutes. Add the vanilla extract and mix until just combined.

Incorporate the eggs: Add the eggs one at a time to the cream cheese mixture, mixing well after each addition. Scrape down the sides of the bowl with a spatula to ensure all ingredients are well blended.

Add sour cream: Gently fold in the sour cream with a spatula, mixing until just combined. Take care not to overmix, as this will help preserve the cheesecake's light and fluffy texture.

Incorporate Kit Kat pieces: Add the chopped Kit Kat bars to the cheesecake batter and gently fold them in until they are evenly distributed throughout the mixture.

Pour into crust: Carefully pour the cheesecake filling over the cooled cookie crust in the springform pan. Use a spatula to smooth the top of the filling for an even surface.

Bake the cheesecake: Place the cheesecake in the preheated oven. Bake for approximately 1 hour, or until the edges are set and the center has a slight jiggle. Once done, turn off the oven and crack the oven door open slightly, allowing the cheesecake to cool slowly for about 1 hour inside.

Chill the cheesecake: After cooling in the oven, remove the cheesecake and let it come to room temperature. Once cooled, cover it with plastic wrap and refrigerate for a minimum of 4 hours, or overnight for the best texture.

Prepare whipped cream topping: When ready to serve, place the chilled heavy cream in a mixing bowl and whip it until soft peaks form. Spread or pipe the whipped cream generously over the top of the cheesecake.

Garnish: Crumble extra Kit Kat bars and sprinkle them over the whipped cream topping for added texture and flavor. Optionally, dust the sides of the cheesecake with cocoa powder for an elegant touch.

Slice and serve: Run a knife around the edges of the springform pan to loosen the cheesecake before releasing the sides. Cut the cheesecake into slices and serve, savoring your delightful Kit Kat cheesecake!
