1 cup uncooked long-grain white rice

2 cups water

1 pound ground beef or turkey

1 packet (1 oz) taco seasoning mix

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 can (10 oz) diced tomatoes with green chilies, undrained

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup sour cream

1/4 cup green onions, chopped (optional)

Salt and pepper to taste

Tortilla chips, for serving (optional)

Optional toppings: diced avocado, salsa, or sliced black olives

Instructions
 

Preheat the Oven: Set your oven to 350°F (175°C). While it's heating, lightly grease a 9x13 inch baking dish to prepare for the bake.

    Cook the Rice: In a medium saucepan over medium-high heat, combine the uncooked rice and water. Bring the mixture to a boil. Once boiling, reduce the heat to low, cover with a lid, and allow it to simmer for about 15 minutes, or until all the water is absorbed and the rice is tender. After cooking, remove the pan from heat and let it sit, covered, for an additional 5 minutes to steam.

      Prepare the Meat Mixture: In a large skillet, heat it over medium heat. Add the ground beef or turkey and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat. Stir in the taco seasoning according to package instructions, allowing the flavors to meld together.

        Combine Ingredients: In the same skillet with the cooked meat, add the cooked rice, black beans, corn, the entire can of diced tomatoes (including their juice), 1/2 cup of shredded cheddar cheese, and the sour cream. Season with salt and pepper to taste. Use a spatula to mix everything until well incorporated.

          Assemble and Bake: Pour the combined mixture into the prepared baking dish. Spread it out evenly across the dish. Top with the remaining shredded cheddar cheese and the Monterey Jack cheese.
