1 pound large shrimp, peeled and deveined

1/4 cup fresh lime juice

1/4 cup fresh orange juice

2 tablespoons tequila (optional; substitute with additional lime juice if desired)

2 tablespoons olive oil

2 tablespoons agave syrup

3 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/4 teaspoon salt

1/4 teaspoon black pepper

Zest of 1 lime

Zest of 1 orange

1 red bell pepper, cut into 1-inch chunks

1 yellow bell pepper, cut into 1-inch chunks

1 red onion, cut into wedges

Fresh cilantro, for garnish

Lime wedges, for serving

Marinate the Shrimp: In a large mixing bowl, whisk together the fresh lime juice, fresh orange juice, tequila (if using), olive oil, agave syrup, minced garlic, chili powder, ground cumin, smoked paprika, salt, black pepper, lime zest, and orange zest until well combined. Add the shrimp to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 1 hour to enhance the flavor.

    Prepare the Vegetables: While the shrimp marinates, chop the red and yellow bell peppers and red onion into bite-sized pieces. Aim for uniform sizes to ensure even cooking.

      Assemble the Kabobs: If using wooden skewers, soak them in water for a minimum of 30 minutes to prevent burning. Once soaked, thread the marinated shrimp onto the skewers, alternating with pieces of bell peppers and red onion to create colorful kabobs.
