Add Egg and Vanilla: Once cooled slightly, stir in the egg and vanilla extract until the mixture is smooth and well combined.
Preheat the Air Fryer: Preheat your air fryer to 350 for about 5 minutes.
Prepare for Frying: Line a baking tray with parchment paper. Using a piping bag fitted with a large star tip, pipe the dough into 6-inch sticks onto the tray. Space them out to allow for expansion during cooking.
Air Fry the Churro Sticks: Lightly spray the air fryer basket with cooking spray. Place the churro sticks in a single layer; you may need to cook them in batches depending on the size of your air fryer. Cook for 8 to 10 minutes or until they are golden brown and crispy.
Coat in Cinnamon Sugar: While the churros are cooking, mix the granulated sugar and ground cinnamon in a shallow dish. Once the churro sticks are done, immediately roll them in the cinnamon sugar mixture to coat them evenly.
Serve and Enjoy: Let the churro sticks cool slightly, then serve them warm with chocolate sauce, dulce de leche, or your favorite dipping sauce!
