Ingredients

4 salmon fillets (6 oz each)

3 tablespoons honey

3 tablespoons Dijon mustard

1 tablespoon olive oil

1 tablespoon apple cider vinegar

Salt and freshly ground black pepper to taste

6 cups mixed salad greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1 ripe avocado, sliced

1/2 cucumber, thinly sliced

1/4 red onion, thinly sliced

1/4 cup chopped walnuts or pecans (optional)

Fresh herbs (such as dill or parsley) for garnish

Instructions

Prepare the Honey Mustard Glaze: In a small mixing bowl, combine honey, Dijon mustard, olive oil, apple cider vinegar, salt, and pepper. Whisk thoroughly until the mixture is smooth and well combined. Set aside half of the glaze for drizzling later.

Marinate the Salmon: Place the salmon fillets in a shallow dish. Pour half of the prepared honey mustard glaze over the fillets, ensuring they are evenly coated. Let the salmon marinate for about 15-20 minutes, turning the fillets halfway through to absorb the flavors.

Cook the Salmon: Preheat your grill or skillet over medium-high heat. Once ready, carefully place the marinated salmon fillets on the grill or in the skillet. Cook for 4-5 minutes on each side, or until the salmon is thoroughly cooked and flakes easily with a fork. If desired, generously brush the salmon with additional glaze while cooking for extra flavor.

Assemble the Salad: In a large salad bowl, combine the mixed salad greens, halved cherry tomatoes, sliced avocado, thin cucumber rounds, and sliced red onion. Gently toss the ingredients together to mix evenly.

Drizzle and Toss: Drizzle the reserved honey mustard glaze over the tossed salad mixture. Use tongs or salad servers to gently toss everything together, ensuring that all ingredients are well coated with the dressing.

Add the Salmon: After the salmon is cooked, remove it from the heat and let it rest for about a minute. Place each salmon fillet on top of the salad. If desired, sprinkle with optional chopped nuts for added crunch.

Garnish and Serve: Finish the dish with a sprinkle of fresh herbs for a pop of color and flavor. Serve immediately while the salmon is warm for the best experience.
