Honey Mustard Chicken and Apple Skewers

Ingredients
  

For the Marinade:

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons apple cider vinegar

2 tablespoons olive oil

2 cloves garlic, minced

Salt and freshly cracked black pepper, to taste

For the Skewers:

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

2 medium apples, cored and cut into 1-inch cubes (Honeycrisp or Fuji recommended)

1 red bell pepper, cut into 1-inch squares

1 green bell pepper, cut into 1-inch squares

Olive oil, for drizzling

Fresh parsley, finely chopped (for garnish)

Instructions
 

Prepare the Marinade:

    In a medium mixing bowl, combine the honey, Dijon mustard, apple cider vinegar, olive oil, minced garlic, salt, and freshly cracked black pepper. Whisk the ingredients together until the mixture is smooth and well blended.

      Marinate the Chicken:

        Place the chicken cubes in a resealable plastic bag or a non-reactive glass dish. Pour half of the prepared marinade over the chicken, ensuring each piece is well coated. Set aside the remaining marinade for basting and serving later. Seal the bag or cover the dish tightly and refrigerate for at least 30 minutes, or up to 4 hours for a deeper flavor infusion.

          Assemble the Skewers:

            Preheat your grill or grill pan to medium-high heat. If you’re using wooden skewers, soak them in water for 30 minutes prior to grilling to prevent them from burning. Alternately thread the marinated chicken, apple cubes, and red and green bell pepper squares onto the skewers, ensuring to leave a small gap between each piece for even cooking and grilling.
