1 pound (450g) large shrimp, peeled and deveined

2 tablespoons vegetable oil (divided)

1 bell pepper (red or yellow), sliced into thin strips

1 cup broccoli florets, washed and trimmed

1 medium carrot, thinly sliced into rounds

3 cloves garlic, finely minced

1 tablespoon fresh ginger, grated

1/4 cup honey

1/4 cup low-sodium soy sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Salt and pepper to taste

Cooked jasmine rice or noodles, for serving

Sesame seeds and sliced green onions for garnish (optional)

Instructions
 

Prepare the Shrimp: In a medium bowl, season the peeled and deveined shrimp with a pinch of salt and pepper. Toss to coat the shrimp evenly, then set aside to marinate briefly.

    Create the Sauce: In a small bowl, combine the honey, soy sauce, rice vinegar, and the cornstarch-water mixture. Whisk until smooth and well blended, then set this sauce aside for later.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering but not smoking.

        Cook the Shrimp: Carefully add the seasoned shrimp to the hot skillet. Stir-fry for approximately 2-3 minutes, flipping occasionally until the shrimp are pink, opaque, and cooked through. Once cooked, remove the shrimp from the skillet and place them in a bowl, covering to keep warm.

          Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced bell pepper, broccoli florets, and carrot. Stir-fry the vegetables for about 4-5 minutes, until they are tender-crisp and vibrant in color.

            Add Garlic and Ginger: Stir in the minced garlic and grated ginger, cooking for an additional 30 seconds until both are fragrant and aromatic.

              Combine with Sauce: Return the cooked shrimp to the skillet. Pour the prepared honey-garlic sauce over the shrimp and vegetables. Stir everything together thoroughly, allowing the sauce to cook and thicken for about 1-2 minutes, ensuring all ingredients are evenly coated.
