1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup long-grain white rice

2 cups low-sodium chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon Dijon mustard

3 tablespoons honey

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup frozen peas (optional)

Fresh parsley, chopped for garnish

Lemon wedges for serving

Prep the Chicken: In a medium bowl, season the bite-sized chicken pieces with salt, pepper, smoked paprika, and dried thyme. Toss them well to coat. Let the seasoned chicken sit for about 10 minutes, allowing the flavors to meld and enhance the meat.

    Cook the Chicken: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the seasoned chicken pieces to the skillet and cook them, stirring occasionally, until the chicken is well-browned on all sides, roughly 5-7 minutes. Once cooked, transfer the chicken to a plate and set aside.

      Sauté Aromatics: In the same skillet, add the chopped onion. Cook for about 3-4 minutes, stirring frequently, until the onion becomes translucent. Then, add the minced garlic and cook for an additional minute until it becomes fragrant and aromatic.

        Add Rice: Stir in the long-grain white rice, mixing it thoroughly with the oil, onions, and garlic. Allow the rice to toast in the skillet for approximately 2 minutes, which will enhance its flavor.

          Mix Sauce: In a small bowl, whisk together the Dijon mustard and honey until smooth. Pour this mixture over the sautéed rice in the skillet, stirring until all the rice is evenly coated.

            Combine & Simmer: Return the browned chicken to the skillet and pour in the low-sodium chicken broth. Increase the heat and bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.

              Add Peas: If using, incorporate the frozen peas into the skillet during the last 5 minutes of cooking, gently stirring them in to heat through without mashing the rice.

                Finish & Serve: Once cooked, remove the skillet from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving. Garnish the dish with freshly chopped parsley for a pop of color and serve with lemon wedges on the side for a refreshing zest.
