Ingredients

For the Meatloaf:

1 ½ pounds ground beef (80/20 blend for optimal juiciness)

1 cup plain breadcrumbs

1/2 cup finely chopped onion

1/2 cup finely chopped celery

2 cloves garlic, minced

1/3 cup ketchup (plus extra for topping)

2 large eggs

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon fresh parsley, finely chopped (for garnish)

For the Mashed Potatoes:

2 pounds Yukon Gold potatoes, peeled and cut into quarters

1/2 cup whole milk (or cream for extra creaminess)

4 tablespoons unsalted butter, at room temperature

Salt and black pepper, to taste

Fresh chives or additional parsley, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it reaches the ideal temperature for baking.

    Prepare the Meatloaf Mixture:

      - In a large mixing bowl, combine the ground beef, plain breadcrumbs, finely chopped onion, celery, and minced garlic. Stir until well mixed.

        - In a separate smaller bowl, whisk together the ketchup, eggs, Worcestershire sauce, dried thyme, salt, and black pepper until smooth.

          - Pour the wet mixture into the bowl of meat ingredients. Use your hands to gently mix everything together until just combined, being careful not to overmix to ensure the meatloaf stays tender.

            Shape and Bake:

              - Transfer the meatloaf mixture to a greased loaf pan. Alternatively, you can shape it free-form into a loaf on a lined baking sheet for a rustic presentation.

                - Spread a generous layer of ketchup (about 1/4 cup) over the top of the meatloaf, which will caramelize and add flavor while baking.

                  Bake the Meatloaf:

                    - Place the meatloaf in the preheated oven and bake for approximately 1 hour. Check that the internal temperature has reached 160°F (70°C) for safe consumption. Once done, let it rest for about 10 minutes before slicing for easier serving.

                      Make the Mashed Potatoes:

                        - While the meatloaf is baking, prepare the mashed potatoes. Place the quartered Yukon Gold potatoes into a large pot and cover them with cold water. Add a pinch of salt, then bring to a boil over medium-high heat.

                          - Cook the potatoes until they are fork-tender, about 15-20 minutes. Drain them thoroughly before returning them to the pot.

                            - Add the whole milk and unsalted butter to the potatoes. Using a potato masher or a hand mixer, mash until they are smooth and creamy. Season with salt and black pepper to taste.

                              Serve:

                                - Slice the meatloaf into thick slices and plate it alongside a generous serving of the whipped potatoes. If desired, drizzle additional ketchup over the meatloaf for added flavor, and finish by garnishing with chopped parsley or fresh chives for a pop of color.

                                  Prep Time: 20 minutes | Total Time: 1 hour 20 minutes | Servings: 6

Presentation Tips: Consider using a colorful plate to contrast the warm hues of the meatloaf and whipped potatoes, and place a sprig of parsley on top of the potatoes for an elegant touch.
