Ingredients

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, chopped

6 cups chicken broth (low-sodium preferred)

2 cups cooked chicken, shredded (using rotisserie chicken is an excellent choice)

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

8 oz egg noodles

Fresh parsley, chopped (for garnish)

Lemon wedges (optional, for serving)

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the diced onion. Sauté for about 3-4 minutes, or until the onion becomes translucent and softened. Stir in the minced garlic and cook for an additional minute, allowing the garlic to become fragrant.

Add Vegetables: To the aromatic base, add the sliced carrots and chopped celery. Sauté for roughly 5 minutes, stirring occasionally, until the vegetables begin to soften but still retain some crispness.

Pour in the Broth: Carefully add the chicken broth to the pot. Increase the heat to high and bring the mixture to a vigorous boil. Once boiling, reduce the heat to medium-low to maintain a gentle simmer.

Season the Soup: Stir in the shredded chicken, dried thyme, dried oregano, and season with salt and pepper. Allow the soup to simmer for about 10 minutes, giving time for the flavors to meld beautifully.

Cook the Noodles: Meanwhile, in a separate pot, cook the egg noodles according to the package instructions until they reach al dente texture. Once cooked, drain the noodles and set them aside.

Combine & Serve: Once the soup has simmered and is aromatic, gently fold the cooked egg noodles into the pot. Stir to combine, and let them heat through for a couple of minutes. Taste the soup and adjust seasoning as necessary.

Garnish & Enjoy: Serve the soup hot in bowls, garnished with a generous sprinkle of fresh parsley. For a zesty kick, include lemon wedges on the side for those who would like a splash of brightness.
