Homemade Pancakes with Maple Syrup

In a large mixing bowl, sift together the all-purpose flour, sugar, baking powder, and salt. Whisk until the dry ingredients are well incorporated and there are no lumps.

    In a separate bowl, crack the large egg and beat it lightly. Add in the milk, melted butter, and vanilla extract, whisking until everything is combined into a smooth mixture.

      Pour the wet ingredients into the bowl of dry ingredients. Using a spatula or wooden spoon, gently fold the mixtures together. Stir until just combined, being careful not to overmix; a few lumps are perfectly fine. Allow the batter to rest for approximately 5 minutes – this will help create fluffy pancakes.

        While the batter is resting, preheat a non-stick skillet or griddle over medium heat. Once hot, add a small knob of butter, letting it melt and swirl to coat the surface evenly.

          Using a ladle or measuring cup, pour approximately 1/4 cup of pancake batter onto the skillet for each pancake. Cook until you see bubbles forming on the surface and the edges begin to look set, about 2-3 minutes.

            Carefully flip the pancakes with a spatula and continue cooking until the other side is golden brown, which should take an additional 1-2 minutes. Keep the cooked pancakes warm in a low-temperature oven (around 200°F or 93°C) while you finish cooking the remaining batter.
