Ingredients

1 sheet of puff pastry, thawed

1 cup fresh ricotta cheese

1/4 cup grated Parmesan cheese

1 tablespoon fresh basil, finely chopped

1 tablespoon fresh parsley, finely chopped

1 teaspoon fresh thyme leaves

1 garlic clove, minced

Salt and black pepper, to taste

1 cup cherry tomatoes, halved

1 egg, beaten (for egg wash)

Olive oil, for drizzling

Balsamic glaze, for drizzling (optional)

Fresh basil leaves, for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

Prepare the Ricotta Mixture: In a medium mixing bowl, combine the fresh ricotta cheese, grated Parmesan cheese, chopped basil, chopped parsley, thyme leaves, minced garlic, and a pinch of salt and black pepper. Stir the mixture well until all ingredients are evenly incorporated. Set aside.

Roll Out the Puff Pastry: On a lightly floured surface, carefully roll out the thawed puff pastry sheet to a thickness of about 1/8 inch. Cut the pastry into 4 to 6 equal squares or circles, depending on your preferred bite size. Aim for a comfortable serving portion.

Add the Ricotta Filling: Take a generous spoonful of the herbed ricotta mixture and place it in the center of each pastry square. Be sure not to overfill to allow for easy folding.

Arrange the Tomatoes: Evenly top the ricotta mixture with the halved cherry tomatoes, positioning them cut side up to enhance their flavor. Season the tomatoes lightly with a sprinkle of salt and black pepper.

Fold the Pastry Edges: Carefully fold the edges of the pastry over the filling towards the center, creating a rustic edge while leaving the center exposed to highlight the colorful filling.

Brush with Egg Wash: Using a pastry brush, apply the beaten egg to the exposed edges of the pastry. This will give them a beautiful golden color as they bake.

Bake the Galette Bites: Place the assembled galette bites onto the prepared baking sheet and bake in your preheated oven for 20-25 minutes. Keep an eye out for the edges turning golden brown and the tomatoes blistering, which indicates they are ready.

Finishing Touches: After baking, remove the galette bites from the oven and drizzle them lightly with olive oil and balsamic glaze if you're using it. Allow them to cool for a few minutes.

Serve: Garnish your galette bites with fresh basil leaves for a pop of color, and serve warm or at room temperature. These delights make for a wonderful appetizer or a savory snack!
