1 cup couscous

1 1/4 cups vegetable broth (or water)

Zest of 1 lemon

Juice of 1 lemon

2 tablespoons extra virgin olive oil

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/2 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup feta cheese, crumbled (optional)

1 avocado, sliced (optional)

Pomegranate seeds for garnish (optional)

Instructions
 

Cook the Couscous: In a medium saucepan, bring the vegetable broth (or water) to a rolling boil over medium-high heat. Once boiling, add the couscous, stir briefly, then remove the saucepan from heat. Cover the pan with a lid and let it rest for about 5 minutes, allowing the couscous to absorb all the liquid.

    Fluff and Season: After the resting period, carefully remove the lid. Using a fork, fluff the couscous to separate the grains. Stir in the lemon zest and juice, olive oil, salt, and black pepper. Mix thoroughly to ensure everything is well combined and coated with flavor.

      Prepare the Vegetables: While the couscous is resting, wash and prepare your vegetables. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, finely chopped red onion, chopped parsley, and mint. Gently toss the vegetables together till they’re well mixed.

        Combine Ingredients: Add the fluffed couscous to the vegetable mixture in the bowl. Stir gently until all ingredients are evenly blended. Taste the mixture and adjust seasoning with more salt or pepper if desired.
