Ingredients

1 pound beef sirloin steak, cut into 1-inch cubes

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon onion powder

For the Chimichurri Sauce:

1 cup fresh parsley, finely chopped

½ cup fresh cilantro, finely chopped

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust according to your spice preference)

½ cup extra-virgin olive oil

3 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Instructions

Prepare the Chimichurri Sauce: In a medium mixing bowl, combine the finely chopped parsley and cilantro. Add in the minced garlic and red pepper flakes. Pour in the extra-virgin olive oil and red wine vinegar. Sprinkle in the dried oregano. Mix thoroughly until all the ingredients are well incorporated. Season the sauce with salt and pepper to your liking. Set the sauce aside to allow the flavors to develop while you prepare the steak.

Season the Steak: In a large mixing bowl, combine the cubed sirloin steak with olive oil, salt, black pepper, garlic powder, and onion powder. Gently toss the steak cubes until they are uniformly coated with the seasoning mix.

Cook the Steak Bites: Heat a large skillet or grill pan over medium-high heat. When the pan is hot, add the seasoned steak bites in a single layer. If your pan isn't big enough, cook them in batches to prevent overcrowding. Sear the steak bites for about 2-3 minutes on each side for a perfect medium-rare finish. Adjust cooking time as needed based on your preferred doneness. Once cooked, remove the steak bites from the heat and let them rest for a few minutes to retain their juices.

Serve: On a large serving platter, arrange the steak bites attractively. Generously drizzle the chimichurri sauce over the top. For added convenience, consider serving extra chimichurri sauce on the side for dipping.

Garnish: For a fresh touch, optionally sprinkle some additional chopped herbs over the steak bites or serve with lemon wedges for a zesty finish.
