Hearty Veggie and Cheese Quesadillas

4 large whole wheat tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 cup bell peppers (any color), diced

1 cup mushrooms, sliced

1 small zucchini, diced

1 small red onion, diced

1 clove garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper, to taste

2 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Salsa and sour cream (for serving)

Instructions
 

Prepare the Vegetables: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once the oil is hot, add the diced red onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent and fragrant.

    Add Remaining Veggies: Add the diced bell peppers, zucchini, and sliced mushrooms to the skillet. Sprinkle in the ground cumin, smoked paprika, and season with salt and pepper. Cook for an additional 5-7 minutes, stirring occasionally, until all the vegetables are tender and slightly caramelized.

      Assemble the Quesadillas: Take each tortilla and lay it flat. On one half of each tortilla, distribute a generous amount of mozzarella and cheddar cheese, then layer with the cooked veggie mixture. If you’re a cheese lover, feel free to add more cheese on top. Fold the tortilla over to form a half-moon shape.

        Cook the Quesadillas: Return the same skillet to the heat, lowering to medium-low. Carefully place the folded quesadillas in the skillet. Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese has melted. Depending on the size of your skillet, you may need to cook them in batches.
