1 cup green or brown lentils, thoroughly rinsed

2 medium carrots, diced into small cubes

2 celery stalks, diced

1 medium potato, peeled and cut into cubes

1 zucchini, diced

1 cup diced tomatoes (either canned or fresh)

6 cups vegetable broth

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

2 cups kale or spinach, roughly chopped

Fresh parsley, chopped (for garnish)

Lemon wedges, for serving

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until it becomes translucent and soft. Then, add the minced garlic, stirring constantly for another 1-2 minutes until it releases a fragrant aroma.
