Ingredients

1 pound ground turkey

1 large sweet potato, peeled and cut into small cubes

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (28 oz) diced tomatoes, undrained

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon salt (adjust to taste)

½ teaspoon freshly ground black pepper

2 cups chicken or vegetable broth

1 tablespoon olive oil

Fresh cilantro, chopped (for garnish)

Optional toppings: sour cream, diced avocado, shredded cheese

Instructions

Prepare the Ingredients: Begin by prepping your vegetables. Dice the onion, bell pepper, and sweet potato into small cubes, and mince the garlic cloves. Gather all ingredients and have them within reach before cooking.

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper to the pot. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables are softened. Then, add the minced garlic and cook for an additional minute until fragrant.

Cook the Turkey: Push the sautéed vegetables to one side of the pot. Add the ground turkey to the cleared space. Use a spatula to break the turkey apart, and cook for about 6-8 minutes, or until the turkey is browned and thoroughly cooked.

Add Seasonings: Once the turkey is cooked, sprinkle the chili powder, cumin, smoked paprika, salt, and black pepper over the mixture. Stir well to combine and allow the spices to toast for about 1 minute to enhance their flavors.

Combine the Ingredients: To the pot, add the diced sweet potato, rinsed black beans, rinsed kidney beans, and the can of diced tomatoes along with their juices. Stir everything together until well combined.

Pour in the Broth: Pour in the chicken or vegetable broth, stirring briefly to combine. Raise the heat until the mixture comes to a gentle simmer.

Simmer the Chili: Cover the pot and reduce the heat to low. Allow the chili to simmer for 25-30 minutes, or until the sweet potatoes are tender. Stir occasionally to prevent any sticking and ensure even cooking.

Taste and Adjust: After simmering, taste the chili. Adjust the seasoning as needed, adding more salt, pepper, or spices according to your preference.

Serve: Ladle the hearty chili into bowls. Garnish each bowl with freshly chopped cilantro, and add any optional toppings like sour cream, diced avocado, or shredded cheese.

Enjoy!: Serve your turkey and sweet potato chili hot, accompanied by your favorite bread or tortilla chips for a fulfilling meal.
