1 cup red lentils, thoroughly rinsed

4 cups vegetable broth or fresh water

1 medium onion, finely chopped

3 cloves garlic, minced

1-inch piece of fresh ginger, grated

2 medium ripe tomatoes, diced

2 cups fresh spinach leaves, chopped

1 teaspoon cumin seeds

1 teaspoon ground coriander

1/2 teaspoon turmeric powder

1/2 teaspoon garam masala

1 tablespoon coconut oil or vegetable oil

Salt, to taste

Fresh cilantro, chopped, for garnish

Juice of half a lemon (optional)

Instructions
 

Prepare the Base: In a spacious pot, heat the coconut oil over medium heat. Once hot, add the cumin seeds and sauté for approximately 30 seconds, or until they release a fragrant aroma.

    Sauté Aromatics: Incorporate the finely chopped onion into the pot. Sauté for 5-7 minutes, or until the onion becomes translucent and soft. Next, add the minced garlic and grated ginger; sauté for an additional minute until fragrant.

      Add the Tomatoes & Spices: Introduce the diced tomatoes to the mixture, along with ground coriander, turmeric powder, and a pinch of salt. Cook for about 5 minutes, allowing the tomatoes to soften and release their juices, creating a rich base.

        Cook the Lentils: Add the rinsed lentils into the pot followed by the vegetable broth (or water). Bring the entire mixture to a gentle boil, then reduce the heat to a simmer. Cover the pot with a lid and let it cook for 20-25 minutes, or until the lentils are tender and cooked through.

          Incorporate the Spinach: Once the lentils are done, stir in the chopped spinach and garam masala. Allow the dhal to simmer uncovered for an additional 5 minutes, or until the spinach becomes wilted and soft.

            Adjust and Serve: Taste the dhal and adjust the seasoning to your preference, adding more salt if necessary. For a zesty finish, squeeze the juice of half a lemon into the dish if desired. Ladle the dhal into serving bowls and generously garnish with fresh cilantro.
