Ingredients

1 cup pearl barley, rinsed and drained

2 tablespoons olive oil

1 medium onion, finely diced

3 cloves garlic, minced

2 medium carrots, diced into small cubes

2 stalks celery, diced

1 bell pepper (red or yellow), chopped into bite-sized pieces

1 medium zucchini, diced

1 cup green beans, trimmed and cut into 1-inch pieces

2 medium potatoes, peeled and cut into cubes

1 can (14 oz) diced tomatoes, including their juices

6 cups vegetable broth (low-sodium recommended)

2 teaspoons dried thyme

1 teaspoon dried rosemary

1 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish

Instructions

Sauté the Aromatics: In a large, heavy-bottomed pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent and soft. Then, stir in the minced garlic and cook for an additional minute until the garlic is fragrant, stirring frequently to prevent burning.

Add the Vegetables: Gradually add the diced carrots, celery, and chopped bell pepper to the pot. Continue to sauté the mixture for about 5-7 minutes, stirring occasionally, until the vegetables start to soften and their flavors meld together.

Combine Remaining Ingredients: Now, add the diced zucchini, trimmed green beans, and cubed potatoes to the mix. Pour in the rinsed pearl barley, the can of diced tomatoes with their juices, and the vegetable broth. Sprinkle in the dried thyme, rosemary, and smoked paprika. Season with salt and black pepper to taste, stirring well to ensure everything is evenly combined.

Simmer the Stew: Increase the heat to bring the concoction to a boil. Once it reaches a boil, reduce the heat to low and cover the pot. Allow the stew to simmer gently for about 35-40 minutes, or until the barley and vegetables are tender and cooked through, stirring occasionally.

Adjust Seasoning: After simmering, taste the stew and adjust the seasoning if needed. For an extra kick, feel free to add a pinch of cayenne pepper or red pepper flakes according to your heat preference.

Serve and Garnish: Once ready, ladle the hearty vegetable stew into bowls. Garnish each serving with a sprinkle of freshly chopped parsley for a burst of color and a hint of freshness. Enjoy the stew warm, paired with crusty fresh bread or as a filling stand-alone meal!
