1 large potato, peeled and diced

4 cups vegetable broth

1 tablespoon extra virgin olive oil

1 teaspoon dried thyme

1 teaspoon salt (adjust according to taste)

½ teaspoon freshly ground black pepper

1 tablespoon fresh lemon juice

Sauté the Vegetables: In a large pot, heat the extra virgin olive oil over medium heat. Add the chopped onion and minced garlic to the pot. Sauté for approximately 3-4 minutes or until the onion becomes translucent and fragrant.

    Add Zucchini and Potato: Stir in the diced zucchinis and diced potato. Continue to cook for an additional 5 minutes, stirring occasionally, until the vegetables begin to soften and the zucchini releases its moisture.
