2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon paprika

4 whole wheat pita pockets

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1 cup baby spinach or mixed greens

1/2 cup feta cheese, crumbled (optional for a lighter option)

1/4 cup kalamata olives, pitted and sliced

1/2 cup tzatziki sauce (store-bought or homemade)

Fresh dill or parsley for garnish (optional)

Marinate the Chicken: In a medium mixing bowl, whisk together the olive oil, dried oregano, garlic powder, paprika, salt, and black pepper. Add the chicken breasts, ensuring they are fully coated in the marinade. Cover the bowl and let the chicken marinate for at least 30 minutes at room temperature or refrigerate for up to 2 hours for enhanced flavor.

    Cook the Chicken: Heat a grill pan or outdoor grill over medium-high heat. Once hot, add the marinated chicken breasts. Grill for approximately 6-7 minutes on each side, or until the chicken is cooked through and the juices run clear. Remove the chicken from the grill and allow it to rest for 5 minutes before slicing.

      Prepare the Vegetables: While the chicken is resting, chop the cherry tomatoes in half, dice the cucumber into small pieces, and thinly slice the red onion. Set aside these fresh ingredients for easy assembly.
