Ingredients

2 cups rolled oats

1 cup unsweetened applesauce

1 large sweet apple, diced (such as Honeycrisp or Fuji)

1/2 cup almond butter (or your favorite nut butter)

1/4 cup honey or maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup walnuts or pecans, roughly chopped (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8-inch baking dish by lining it with parchment paper, allowing some paper to hang over the edges for easy removal later.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground cinnamon, and salt. Stir the dry ingredients together until they are evenly mixed.

Prepare the Wet Ingredients: In a separate bowl, whisk together the unsweetened applesauce, almond butter, honey (or maple syrup), and vanilla extract until the mixture becomes smooth and fully blended.

Combine Mixtures: Pour the wet ingredients into the bowl with the dry oats. Stir well to ensure that all the oats are thoroughly coated. Gently fold in the diced apple, any chopped nuts, and dried fruit (if you’re using them). The final mixture should be thick and somewhat sticky.

Transfer to Baking Dish: Spoon the mixture into the prepared baking dish. Use a spatula or your hands to spread it out evenly, pressing it down firmly to help it hold its shape during baking.

Bake: Place the dish in the preheated oven and bake for 25-30 minutes. The edges should turn a light golden color, and the center should feel firm to the touch.

Cool and Slice: Once baked, allow the bars to cool in the pan for approximately 10 minutes. Lift them out of the pan using the parchment paper and transfer to a cutting board. Allow them to cool completely before slicing into bars.

Store: Keep the bars in an airtight container in the refrigerator for up to one week, or freeze them for longer storage.
