Hatch Green Chiles: 1 cup, diced (fresh or canned)

Red Bell Pepper: 1 medium, diced

Spinach: 2 cups, fresh, roughly chopped

Mushrooms: 1 cup, sliced (button or cremini)

Eggs: 4 large

Cheddar Cheese: 1 cup, shredded

Feta Cheese: 1/2 cup, crumbled

Garlic: 2 cloves, minced

Cumin: 1 teaspoon

Salt: 1/2 teaspoon (adjust to taste)

Black Pepper: 1/4 teaspoon (adjust to taste)

Fresh Cilantro: 1/4 cup, chopped (for garnish)

Avocado: 1, sliced (for topping)

Preheat the Oven: Preheat your oven to 475°F (245°C). If you are using a pizza stone, position it in the oven now to ensure it heats up properly.

    Prepare the Dough: On a lightly floured surface, roll out the pizza dough to your desired thickness, aiming for about 12 inches in diameter. Carefully transfer the dough to a parchment-lined baking sheet or a pizza paddle if you plan to bake it directly on a pizza stone.

      Sauté the Vegetables: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic, diced Hatch chiles, red bell pepper, sliced mushrooms, and roughly chopped spinach. Sauté the mixture for approximately 5-7 minutes, or until the vegetables are softened and the spinach is wilted. Season with cumin, salt, and black pepper. Remove the skillet from heat.

        Assemble the Pizza: Evenly distribute the sautéed vegetable mixture over the pizza dough. Generously sprinkle the shredded cheddar cheese on top. Use a spoon to create four small wells in the topping, carefully enough to hold the eggs.
