1 cup sharp cheddar cheese, grated

8 large eggs

1 cup whole milk

1 cup diced bread (preferably day-old, like sourdough or French bread)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika (for added depth)

Salt and black pepper to taste

1/4 cup green onions, chopped (for garnish)

Optional: 1/2 cup cooked and crumbled breakfast sausage or bacon
