Grilled Peach Blueberry Salad

Ingredients
  

4 ripe peaches, halved and pitted

1 cup fresh blueberries

4 cups mixed salad greens (such as arugula and spinach)

1/2 cup crumbled feta cheese

1/4 cup chopped walnuts or pecans

3 tablespoons extra virgin olive oil, divided

1 tablespoon balsamic vinegar

1 tablespoon honey

Salt and freshly ground black pepper to taste

Fresh mint leaves for garnish (optional)

Instructions
 

Preheat the Grill: Preheat your outdoor grill to medium heat. Alternatively, if using a grill pan on the stovetop, set it to medium heat as well.

    Prepare the Peaches: Lightly brush the cut side of each peach half with 1 tablespoon of olive oil. This will help to prevent sticking and promote a lovely caramelization during grilling.

      Grill the Peaches: Place the peach halves cut side down on the grill. Grill them for about 4 to 5 minutes, or until beautiful grill marks form and the peaches are tender. Carefully flip the peaches and continue grilling for another 2 to 3 minutes. Once done, remove them from the grill and let them cool for a few minutes before slicing.

        Make the Dressing: In a small mixing bowl, whisk together the remaining 2 tablespoons of olive oil, balsamic vinegar, honey, salt, and freshly ground black pepper. Mix until all ingredients are well incorporated and emulsified.

          Assemble the Salad: In a large salad bowl, combine the mixed salad greens with the grilled peaches (now sliced), fresh blueberries, crumbled feta cheese, and the chopped walnuts or pecans.

            Dress the Salad: Drizzle the prepared dressing over the salad mixture. Gently toss all the ingredients together, ensuring that the peaches and blueberries are evenly distributed throughout the salad.
