Ingredients

4 ears of fresh corn, husked

2 ripe avocados, diced

1 medium red onion, finely chopped

1 red bell pepper, diced

1 small jalapeño, seeds removed and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

Instructions

Grill the Corn: Begin by preheating your grill to medium-high heat. Once hot, lightly brush the husked corn with olive oil to prevent sticking. Place the corn directly on the grill and cook for approximately 10-12 minutes. Remember to turn the corn every few minutes to ensure even charring and tenderness. Once done, remove the corn from the grill and allow it to cool slightly. Once cool enough to handle, carefully cut the kernels off the cobs and transfer them into a large mixing bowl.

Prepare the Salsa: In the mixing bowl with the grilled corn, add your diced avocados, finely chopped red onion, diced red bell pepper, and the minced jalapeño if you’re opting for some heat. Gently fold the ingredients together using a spatula or large spoon to combine evenly.

Dress the Salsa: In a separate small bowl, whisk together the fresh lime juice, remaining olive oil, smoked paprika, and a pinch of salt and pepper. Once well combined, pour this dressing over the corn and avocado mixture in the large bowl.

Add Fresh Herbs: Now, take the chopped cilantro and gently fold it into the salsa, being careful not to mash the avocados too much. Taste the mixture and adjust the seasoning with additional salt, pepper, or lime juice if desired, to achieve your preferred flavor balance.

Chill and Serve: Allow the salsa to rest for at least 15 minutes before serving. This resting time is crucial as it lets all the flavors meld beautifully. Serve the salsa alongside grilled meats, with crispy tortilla chips for dipping, or as a vibrant and refreshing side dish all on its own.
