4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

Juice of 1 lime

For the Peach Salsa:

2 ripe peaches, diced into small cubes

1/2 medium red onion, finely chopped

1/2 red bell pepper, diced

1 jalapeño, deseeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, smoked paprika, garlic powder, onion powder, lime juice, salt, and black pepper. Add the chicken breasts to the marinade and ensure all sides are well coated. Cover the bowl with plastic wrap and place in the refrigerator to marinate for at least 30 minutes, but for best results, marinate for up to 2 hours.

    Prepare the Salsa: While the chicken is marinating, prepare the peach salsa. In a separate bowl, combine the diced peaches, finely chopped red onion, diced red bell pepper, minced jalapeño, chopped cilantro, lime juice, and a pinch of salt. Stir well to combine, then let it sit for about 10-15 minutes to allow the flavors to develop.
