8 oz. penne pasta

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, thinly sliced

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

¼ cup fresh parsley, chopped

2 tablespoons red wine vinegar

1 tablespoon fresh lemon juice

1 teaspoon garlic powder

Instructions
 

Cook the Pasta: Fill a large pot with water, add a generous pinch of salt, and bring it to a boil. Once boiling, add the penne pasta and cook according to the package instructions, typically around 10-12 minutes, until al dente. Drain the pasta in a colander and run cold water over it to halt cooking. Set aside to cool.

    Marinate the Chicken: In a small mixing bowl, whisk together 2 tablespoons of olive oil, dried oregano, and a sprinkle of salt and pepper. Coat each chicken breast evenly with the marinade and let it sit for at least 15 minutes to absorb the flavors.

      Grill the Chicken: Preheat your grill to a medium-high setting. Once hot, place the marinated chicken breasts on the grill. Cook for about 6-7 minutes per side until fully cooked, and the internal temperature reaches 165°F (75°C). Once done, remove them from the grill and allow them to rest for about 5 minutes before slicing them into strips.
