2 boneless, skinless chicken breasts

1 cup fresh corn kernels (or 1 cup canned/frozen corn, drained)

1 Romaine lettuce heart, chopped into bite-sized pieces

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese

1/4 cup Caesar dressing (store-bought or your favorite homemade version)

1 teaspoon garlic powder

1 tablespoon olive oil

Salt and pepper to taste

Optional: croutons for topping, fresh parsley for garnish

Marinate the Chicken: In a small bowl, combine olive oil, garlic powder, salt, and pepper to create a marinade. Rub this mixture generously over the chicken breasts, ensuring an even coating. Allow the chicken to marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for more robust flavor.

    Grill the Chicken: Preheat your grill or grill pan to medium-high heat. Once hot, place the marinated chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once grilled, remove from the heat and let the chicken rest for a few minutes before slicing it into strips.

      Grill the Corn (if using fresh): If you opted for fresh corn, place the corn cobs directly on the grill alongside the chicken. Grill for approximately 10-12 minutes, turning occasionally until you see those beautiful grill marks. Once done, let the corn cool slightly, then carefully cut the kernels off the cob.

        Prepare the Salad: In a large salad bowl, add the chopped Romaine lettuce, freshly grilled corn, halved cherry tomatoes, and sliced grilled chicken. Toss everything together gently to mix the ingredients well.

          Dress the Salad: Drizzle the Caesar dressing over the salad and toss to coat all the ingredients evenly. Sprinkle the grated Parmesan cheese on top for that delightful cheesy flavor. If desired, add croutons for an added crunch.
