1 cup thick Greek yogurt

1 cucumber, grated and excess moisture removed

2 cloves garlic, finely minced

1 tablespoon extra-virgin olive oil

1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried)

1 tablespoon fresh lemon juice

Salt and freshly cracked black pepper, to taste

For the Wraps:

4 whole wheat pita breads

1 cup baby spinach or mixed greens

1 medium tomato, diced

½ red onion, thinly sliced

½ cup feta cheese, crumbled

¼ cup Kalamata olives, pitted and sliced

Marinate the Chicken: In a medium bowl, mix together the olive oil, lemon juice, minced garlic, oregano, smoked paprika, salt, and pepper. Add the chicken thighs, ensuring they are evenly coated in the marinade. Cover the bowl and refrigerate for at least 30 minutes, up to 1 hour for maximum flavor absorption.

    Prepare the Tzatziki Sauce: While the chicken marinates, prepare the tzatziki sauce. In a separate mixing bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, salt, and pepper. Stir well until all ingredients are evenly mixed.
